The South Western State of Kerala is famed for its abundance of coconut trees and its spice gardens.

The region has a truly fantastic cuisine which builds on the wealth of local ingredients and is influenced in equal measure by its Hindu, Christian and Muslim communities.

This coconut-based curry, flavoured with curry leaves and mustard seeds, and soured with tomatoes and tamarind is a true classic and celebrates all the best flavours of Kerala.

Cooking Instructions

3 SIMPLE STEPS | READY IN 5 MINS


Preparation: Cut the meat, fish/seafood, vegetables into generous pieces or halve your boiled eggs.

If you don't like whole spices, powder these in a pestle and mortar and add them in at the end. Alternatively, if left whole, remove them with a spoon before serving.

  1. Heat 1 tsp of oil in a pan, add the spices and cook for 20 seconds.
  2. Add the meat or vegetables and brown lightly.
  3. Stir in the main sauce along with 50ml of water and bring to boil. Add the fish/seafood (if using) and simmer for another 3-5 minutes or until the meat or other protein is cooked through.
  4. Serve with The Spice Tailor Naans, rice or parathas.

  • Try fish steaks for a fuller flavour.
  • Also great with shellfish (try fresh prawns or mussels), chicken, duck or hard-boiled eggs.

  • Finish the curry with a little roasted, flaked coconut.
