Ingredients
  • 1 pack of The Spice Tailor Thai Massaman Curry
  • 2 chicken breasts - cut slashes into the breasts
  • 1 small red capsicum- cut into cubes
  • 150g tenderstem broccoli - trimmed
  • 50 ml concentrated chicken stock
  • 30g roasted cashew nuts or peanuts - crushed
  • Lime juice to serve
Method
  1. Preheat the oven to 220°C (Fan 200°C/Gas Mark 7).
  2. Mix the Massaman sauces from the 2 pouches together in a bowl and add the chicken stock.
  3. Place the chicken breast into an ovenproof dish or roasting tin.
  4. Pour the sauce over the chicken and rub into the slashes.
  5. Scatter the vegetables around the chicken, place into the preheated oven and cook for 20-25 minutes - or until the chicken is cooked and charred around the edges.
  6. Remove from the oven and sprinkle with nuts and a squeeze of lime juice if desired.
